How to use a mountain of scallions?

Hey r/cooking! I never thought I’d find myself in this situation, but here I am, reaching out for ideas on how to utilize a ridiculous surplus of scallions.

I’ve got a well-equipped kitchen with plenty of appliances (like a Vitamix and a food processor). I’ve already shared some scallions, but I still have a large batch left for myself. I’m looking for creative ways to use them, and I’d love suggestions I can also pass along to others who might be in the same boat. All ideas are welcome—thank you!

EDIT: A huge thanks to everyone for the suggestions! We’re planning to make kimchi, try out the David Chang sauce, and whip up some pancakes if we still have scallions left. I absolutely love scallions and can’t wait to get started!

Also, I often make pesto in the summer, usually with a mix of cilantro, herbs, and scallions, and I think that’s another fantastic way to use them!
