How to Use Up a Mountain of Scallions?

Hello r/cooking! I never expected to find myself in this situation, but here I am, reaching out for ideas on how to make the most of an absurdly large stash of scallions.

My kitchen is pretty well-equipped with appliances like a Vitamix and a food processor, and I’ve already shared some scallions with family and friends. Now, I’m looking for suggestions on how to tackle the substantial portion I have left for myself. I’d appreciate any ideas, and feel free to share them with others who are also swimming in scallions!

EDIT: Huge thanks to everyone for the fantastic suggestions! We’re planning to make kimchi first, then try the David Chang sauce, and if we have any left afterward, scallion pancakes. I absolutely love scallions and can’t wait to get started!

By the way, I often make pesto in the summer using a mix of herbs, including cilantro and scallions, which is another great way to use them!
