I can’t believe I ever used regular pans! Cast iron has become my go-to kitchen companion! Quick question: can I use my cast iron skillet to make chicken marsala? I heard someone mention that cream-based sauces can rust the pan. Is that true, or is there some misinformation out there?

Wow i will never go back to regular pans. Cast Iron is my new friend!

Absolutely, you can use your cast iron pan to make chicken marsala! Cast iron is great for searing and browning, which is perfect for this dish.
As for the concern about cream and rust, it’s a bit of a misconception. While it’s true that acidic ingredients (like tomatoes or vinegar) can damage the seasoning on your cast iron, cream shouldn’t cause any harm. Just make sure your pan is well-seasoned, and you should be good to go. After cooking, simply clean it properly and reapply a thin layer of oil to maintain the seasoning. Enjoy your cooking!
