Sure! Here’s a simple and delicious recipe for Tomato Basil Chicken that uses chicken breast and tomato paste.
Ingredients:
– 2 boneless, skinless chicken breasts
– 2 tablespoons olive oil
– 1 can (6 oz) tomato paste
– 1 teaspoon dried basil (or 1 tablespoon fresh basil, chopped)
– 2 cloves garlic, minced
– Salt and pepper to taste
– Optional: Parmesan cheese for serving
– Fresh basil for garnish
Instructions:
Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
Cook the Chicken: In a large skillet, heat the olive oil over medium heat. Add the chicken breasts and cook for about 6-7 minutes on each side until they are golden brown and cooked through. Remove the chicken from the skillet and set aside.
Make the Sauce: In the same skillet, add the minced garlic and cook for about 30 seconds until fragrant. Then, add the tomato paste and a splash of water to thin it out. Stir in the dried basil and season with salt and pepper. Let the sauce simmer for a few minutes.
Combine: Return the chicken to the skillet, spoon some sauce over the chicken, and let it simmer for an additional 2-3 minutes to meld the flavors.
Serve: Serve the chicken topped with the sauce and sprinkle with Parmesan cheese and fresh basil if desired.
