Super easy meal ideas for toddler and me

Simple Meal Ideas for My Toddler and Me

I’m seven months pregnant and also caring for my one-and-a-half-year-old. I’m on the lookout for quick and easy meal ideas, especially since pregnancy brain isn’t making things any easier! Fortunately, my toddler is pretty open to trying different foods (for now, at least!). The only food I’m not a fan of this pregnancy is sausage in a casing, which is a bit random, I know. I’d really appreciate any suggestions! Thanks so much!

  1. Congratulations on your pregnancy! Here are some super easy meal ideas that you and your toddler might enjoy:

    1. Veggie Pancakes: Mix grated zucchini or carrots with pancake batter and cook them up. Serve with a little yogurt or applesauce for dipping!

    2. Quesadillas: Fill a tortilla with cheese and whatever veggies you have on hand. You can even sneak in some beans for added protein. Cook until the cheese melts, then cut into triangles.

    3. Pasta Salad: Toss cooked pasta with some chopped veggies (like bell peppers and cucumbers), cubed cheese, and a simple dressing. Add some cooked chicken or chickpeas for extra protein.

    4. Baked Sweet Potatoes: Bake sweet potatoes, then top with black beans, a sprinkle of cheese, and a dollop of sour cream or yogurt.

    5. Smoothie Bowls: Blend up a smoothie with your favorite fruits and veggies, then pour it into a bowl and let your toddler add toppings like granola, shredded coconut, or sliced fruit.

    6. Fruit and Yogurt Parfaits: Layer yogurt with your toddler’s favorite fruits and a sprinkle of oats or granola on top. Easy to make and super nutritious!

    7. Mini Pita Pizzas: Spread tomato sauce on pita bread, top with cheese and any other toppings (like veggies or pepperoni), and bake until the cheese is melted.

    8. Scrambled Eggs: Scramble some eggs and serve with toast and avocado. You can add diced veggies or cheese to the eggs for extra flavor.

    9. Rice and Beans: Cook up some rice and mix in canned beans (like black beans, rinsed). Add a little cheese and salsa for a tasty dish.

    10. Homemade Mac and Cheese: Cook pasta, then mix it with melted cheese and a little milk. You can also stir in some steamed broccoli or peas for added nutrition.

I hope some of these ideas help to make your meal prep a little easier! Enjoy this special time with your little one!
