Bought an extra 2 gallons of whole milk

I accidentally bought an extra 2 gallons of whole milk while grocery shopping yesterday—new parent brain, I guess! Now, I’ve got 3 gallons of milk in my fridge.

Aside from a ton of cereal and hot chocolate, what dishes can I whip up before it goes bad?

I decided to make Paneer. I’m currently at the stage where it’s hanging over the sink for 30 minutes. The recipe is a mix of the detailed Serious Eats version and Swasthi’s approach.

EDIT 2: It turned out really well! I can’t figure out how to upload a photo, but I’m excited to try making Paneer Tikka Masala later!
