Budget-Friendly Goat Stew Recipe – What do you think? Any other suggestions?

I’m on a tight budget but I have 4 pounds of cubed goat meat and I’m trying to come up with a recipe that primarily uses ingredients I already have, or that are inexpensive to buy.

Does this recipe sound appetizing? I’d love any thoughts on it or any other ideas you might have!

Goat Stew Ingredients:

  • 4 lbs cubed goat meat
  • 1 can coconut milk
  • A few chipotles in adobo sauce (chopped, along with 1-2 tablespoons of the sauce)
  • 2-3 tablespoons creamy peanut butter
  • 1 can diced tomatoes
  • 2 chopped onions
  • 4 large chopped carrots

Spices:

  • 1-2 teaspoons cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon ginger
  • A pinch of cinnamon
  • 4-6 cloves garlic, minced
  • Oil for browning
  • Salt and pepper
  • Beef broth as needed

Instructions:

  1. Brown the goat meat in a pot and set it aside.
  2. In the same pot, cook the onions until they’re softened.
  3. Add the garlic and spices, cooking for another minute until aromatic.
  4. Stir in the diced tomatoes, chopped chipotles, adobo sauce, and peanut butter until well combined.
  5. Pour in the coconut milk and mix thoroughly.
  6. Return the browned goat meat to the pot.
