Budget-Friendly Goat Stew Recipe – What do you think? Any other suggestions?
I’m on a tight budget but I have 4 pounds of cubed goat meat and I’m trying to come up with a recipe that primarily uses ingredients I already have, or that are inexpensive to buy.
Does this recipe sound appetizing? I’d love any thoughts on it or any other ideas you might have!
Goat Stew Ingredients:
- 4 lbs cubed goat meat
- 1 can coconut milk
- A few chipotles in adobo sauce (chopped, along with 1-2 tablespoons of the sauce)
- 2-3 tablespoons creamy peanut butter
- 1 can diced tomatoes
- 2 chopped onions
- 4 large chopped carrots
Spices:
- 1-2 teaspoons cumin
- 1 teaspoon coriander
- 1/2 teaspoon ginger
- A pinch of cinnamon
- 4-6 cloves garlic, minced
- Oil for browning
- Salt and pepper
- Beef broth as needed
Instructions:
- Brown the goat meat in a pot and set it aside.
- In the same pot, cook the onions until they’re softened.
- Add the garlic and spices, cooking for another minute until aromatic.
- Stir in the diced tomatoes, chopped chipotles, adobo sauce, and peanut butter until well combined.
- Pour in the coconut milk and mix thoroughly.
- Return the browned goat meat to the pot.
- Add enough beef broth to cover the meat.
- Bring the stew to a boil, then reduce the heat to simmer, cover, and cook for about 2 hours or until the meat is tender.
- In the last 30 minutes of cooking, add the chopped carrots.
- If needed, simmer uncovered to thicken the stew to your desired consistency.
