Cookbook recommendations?

Looking for cookbook suggestions! After having a few disappointing experiences with online recipes, I want to grow my cookbook collection. I currently have Dessert Person and J. Kenji López-Alt’s The Food Lab, with Dessert Person providing some fantastic recipes. I’m particularly interested in recommendations for cookbooks that focus on Indian, Asian, or Persian cuisines.
