Cooking for two in an Air BnB for one night. Any ideas that aren’t too ingredient-heavy?

I’m planning a cozy one-night cooking experience for my boyfriend and me at an AirBnB during our weekend getaway. We’ve already booked a restaurant for our second evening, but we’d love to whip up a meal together on our own, since we don’t live together and rarely get this quality time. We’re both decent cooks with no food allergies or dietary restrictions, so that’s not an issue.

I’m looking for meal ideas that don’t require a ton of ingredients or spices that we’d only use for one meal. Plus, we’re doing Italian for dinner on our second night, so I’d prefer to avoid pasta for our first meal. I’m definitely open to taking home any leftovers, but I want to keep things simple and use ingredients that will be fine for about 3-4 hours outside the fridge on our drive home.
