Desperately need no oven/no pot recipes!!!

I’m in urgent need of recipes that don’t require an oven or a pot!

To give you a bit of context, I’m currently staying in an Airbnb in Thailand for a few months. I have access to a stovetop, a frying pan, a microwave, and a kettle, but not much else. While I’m willing to buy a few basic tools like a spatula, I’d rather avoid purchasing a pot or other heavy equipment since I’d need to dispose of them before I leave. Eating out is becoming expensive and isn’t always the healthiest option, so I’d love your suggestions for easy recipes I can make with what I have!

Edit: I’ve decided to buy a pot after all. Also, I’d appreciate it if the focus stayed on recipes rather than comments about my financial situation or the local food options. I do enjoy Thai cuisine, and it’s healthier than the takeout back home, but I want some variety in my meals. Thanks for your help!
