Can I use a sealed jar of red curry paste that expired 6 months ago? The expiration date is 9/18/2024. I haven’t opened it yet to check the smell or taste, and it has been stored in the fridge for a few months. What do you think?

As a general rule, many canned and jarred products can still be safe to consume after their expiration date if they have been properly stored and the seal remains intact. Since your red curry paste is still sealed and has been refrigerated, it’s likely safe to use even though it expired 6 months ago.
Before you use it, give it a good smell and look for any signs of spoilage like discoloration or an off odor. If it seems fine, tasting a small amount can also help you determine if the flavor is still good. If you have any doubts, it’s always better to err on the side of caution and discard it.
