Freezer-burnt bones in beef stock?

Can I use freezer-burnt beef bones in stock?
I have a stash of beef bones and trimmings that have developed significant freezer burn. Are they still good for making stock, or should I just get rid of them?

I plan to make stock with fresh beef bones tomorrow, and it would be great to include the old frozen ones, but I’d prefer to know if they’ll negatively impact the flavor beforehand!

  1. You can definitely use freezer-burnt bones in your beef stock! While freezer burn can affect the appearance and texture of the bones, it won’t ruin the flavor of the stock. The key to a great stock is the depth of flavor, and the older bones can still contribute to that. Just make sure to trim away any severely burnt parts, and give the bones a good rinse to eliminate any ice crystals or off-putting flavors. When you combine them with your fresh bones, they should enhance the overall richness of your stock. Happy cooking!
