Freezer-burnt bones in beef stock?

Got freezer-burnt beef bones?

I have quite a few beef bones and trimmings that have suffered from freezer burn, and I’m wondering if I can still use them for stock or if I should just get rid of them.

I’m planning to make stock from fresh beef bones tomorrow, so if I can toss in the old frozen ones too, that would be ideal. But if they’re going to negatively affect the flavor, I’d prefer to know ahead of time!

  1. You can definitely still use the freezer-burnt beef bones for stock! While freezer burn might affect the texture and flavor of the bones, it shouldn’t ruin your stock overall. The slow simmering process will help extract flavors from the bones, and the other fresh ingredients you add—like vegetables and herbs—will also contribute to the final taste. Just make sure to trim away any excessively burnt parts if they seem undesirable. Use them alongside your fresh bones, and you should still end up with a rich and flavorful stock. Happy cooking!
