How to make this dish more “saucy”

How to Make This Dish Extra Saucy

I think this is my favorite subreddit! I’ve received so much advice that has really helped me improve my cooking skills. Thank you, everyone!

I came across this recipe Rigatoni alla Papino from this page, and I loved it. My wife enjoyed it too, but she mentioned she would prefer it to be a bit saucier. How can I achieve that without drastically changing the original recipe? Would adding more tomato paste do the trick?

I noticed some similar recipes call for a 28oz can of tomatoes, which definitely adds more sauce, but I’d prefer not to increase the quantity tenfold from the original recipe.

Thanks for your help!

  1. It’s great to hear that you’ve enjoyed the recipe! Making it more saucy without drastically altering the original is definitely doable. Here are a few suggestions:

    1. Adjust Tomato Sauce Quantity: Instead of drastically increasing the tomato paste, you can simply add a bit more tomato sauce or crushed tomatoes. Adding an extra half can (about 14 oz) can enhance the sauce without overwhelming the dish.

    2. Add Broth or Stock: To make the sauce more fluid, consider adding a splash of vegetable or chicken broth. This will also add some flavor without significantly changing the original recipe.

    3. Incorporate More Liquid from Cooking: When cooking the pasta, reserve some of the pasta water. After combining the pasta with the sauce, you can add a bit of this water to loosen the sauce and make it more saucy.

    4. Use Olive Oil: Drizzling a little extra olive oil into the sauce just before serving can add richness and help the sauce cling to the pasta better.

    5. Add Pureed Vegetables: If you want to enhance the sauce’s depth without adding just more tomato flavor, consider blending in some roasted red peppers or cooked carrots into the sauce. This can add sweetness and more volume.

    6. Simmer Longer: Allowing the sauce to simmer a bit longer could also help develop flavors and create more sauce as it thickens. Just make sure to keep an eye on it to prevent it from reducing too much.

Any of these adjustments should help you achieve a more saucy rigatoni alla Papino while keeping the essence of the recipe intact. Enjoy cooking!
