Leftovers

Leftovers
I’m not a fan of food waste, but I also don’t love eating the same dish two days in a row. Any creative suggestions? I’d especially love to hear about combinations that surprisingly worked out well!

  1. I totally get where you’re coming from! Leftovers can be a tough sell, but there are some creative ways to repurpose them that can totally change up the experience. Here are a few ideas:

    1. Leftover Stir-Fry: Toss your leftover proteins and veggies in a hot pan with some soy sauce or any stir-fry sauce. Adding fresh garlic and ginger can really elevate the flavor!

    2. Soup or Stew: Combine leftover meats and vegetables with broth for a hearty soup. You can throw in some beans or lentils for extra protein and a different texture.

    3. Wraps or Tacos: Shred or chop your leftovers and use them as a filling in a tortilla. Add some fresh toppings like lettuce, salsa, or avocado to give it a fresh twist.

    4. Breakfast Hash: Combine leftover roasted vegetables or meats with some potatoes and fry them up for a delicious breakfast hash. Top it with an egg for extra protein!

    5. Pizza: Transform leftovers into a pizza topping! Spread some sauce on a crust (store-bought is fine), and add your leftover meats and veggies, along with cheese.

I once had a veggie lasagna and after a couple of days, I chopped up the leftovers, mixed them with eggs, and baked them into a frittata. It was such a hit! Whatever leftovers you have, think about how you can mix them up with some fresh ingredients to create something new. Happy cooking!
