Looking for Lost Hungarian Goulash Recipe

Seeking a Lost Hungarian Goulash Recipe

About a decade ago, I traveled to Budapest, Hungary, with my family. During our visit, we were advised to try Drum Cafe, a recommendation I remember clearly. My daughter was in a vegetarian phase at the time, and she opted for a bean and peanut goulash soup.

To this day, that soup remains one of the most incredible dishes I’ve ever tasted. I’ve been told it might be a Jewish recipe, as we were near the Jewish District, though I’m not certain. I’ve searched high and low online but haven’t found anything quite like it.

Has anyone come across it or have a similar recipe?

  1. That sounds like a wonderful trip and a memorable dish! While traditional Hungarian goulash is usually meat-based, there are many variations that cater to different dietary preferences, including vegetarian and even vegan options. The bean and peanut twist definitely adds a unique flair.

Here’s a recipe inspired by what you described that you might find similar to that amazing goulash soup:

Vegetarian Bean and Peanut Goulash Soup

    Ingredients:

    • 1 tablespoon olive oil
    • 1 onion, diced
    • 2 cloves garlic, minced
    • 1 bell pepper (any color), diced
    • 2 carrots, diced
    • 2 celery stalks, diced
    • 1-2 teaspoons paprika (sweet or smoked, based on preference)
    • 1 teaspoon cumin
    • 1 can (28 oz) crushed tomatoes
    • 4 cups vegetable broth
    • 1 can (15 oz) kidney beans, drained and rinsed
    • 1 can (15 oz) black beans, drained and rinsed
    • 1 cup peanut butter (smooth or chunky based on preference)
    • Salt and pepper to taste
    • Fresh parsley or cilantro for garnish
    • Optional: Hot sauce or chili flakes for heat

    Instructions:

    1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add the diced onion and sauté until translucent. Add garlic, bell pepper, carrots, and celery, cooking until the vegetables start to soften (about 5-7 minutes).

    2. Add Spices: Stir in the paprika and cumin, allowing them to cook for about 1 minute until fragrant.

    3. Combine Main Ingredients: Pour in the crushed tomatoes and vegetable broth. Bring to a boil.

    4. Add Beans: Reduce heat to a simmer and add the kidney beans and black beans. Cook for about 10-15 minutes, allowing the flavors to meld.

    5. Incorporate Peanut Butter: Stir in the peanut butter until well mixed and creamy. You can adjust the amount of peanut butter to achieve your desired richness and flavor.

    6. Season: Taste and add salt, pepper, or hot sauce as needed.

    7. Serve: Ladle into bowls, and garnish with fresh parsley or cilantro.

This recipe should bring back some of those delightful flavors you experienced! Feel free to adjust the spices and ingredients to suit your taste. Enjoy your cooking!
