    Chickpea and Spinach Curry

    Ingredients:
    – 1 can of chickpeas (drained and rinsed)
    – 1 can of coconut milk
    – 1 onion, chopped
    – 2-3 cloves of garlic, minced
    – 1-inch piece of ginger, grated
    – 2 cups fresh spinach (or more if you love greens!)
    – 1 can of diced tomatoes
    – 2 tablespoons curry powder (adjust to taste)
    – 1 tablespoon olive oil
    – Salt and pepper to taste
    – Cooked rice or quinoa for serving

    Instructions:
    1. Heat the olive oil in a large pan over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
    2. Stir in the garlic and ginger, cooking for another minute until fragrant.
    3. Add the curry powder and cook for about 30 seconds to release the flavors.
    4. Pour in the diced tomatoes and coconut milk, bringing the mixture to a gentle simmer.
