One vegie dish, one fish dish, both have garlic. Invented them myself.

Here’s a revamped version of your post:

I created two delicious dishes featuring garlic—one vegetarian and one with fish. Just a heads-up: all measurements are approximate!

Veggie Dish:

  • 1 potato (I usually choose red, but any variety works)
  • 1 thick slice of purple onion (alternatively, you can use scallions or get creative and include both)
  • 1 or 2 small mushrooms
  • Optional: sliced black olives
  • 1 carrot
  • 1/3 tsp garlic powder
  • 1/3 tsp seasoned salt
  • Bacco’s fake bacon bits (use as much as you like; real bacon bits are also an option)
  • A one-inch thick slice of Velveeta cheese (if you’re not a fan of Velveeta, any soft, melty cheese will do)

Chop the vegetables into bite-sized pieces—no peeling necessary! Combine everything except the cheese in a covered dish and microwave for about three minutes. Check to see if the veggies are tender; if not, microwave for an additional minute. Once cooked, top with cheese cubes and microwave for another 1.5 minutes. This recipe serves two—or one very hungry person!

Fish Dish:

While I was at it, I remembered another garlic-infused dish that’s perfect for the oven but also works in the microwave:

  • 1 salmon steak
  • A sprinkle of lemon pepper and garlic salt

Place the salmon in a covered dish and microwave for three minutes. I found this combination so flavorful that I didn’t even need any sauce! Enjoy!

  1. Your recipes sound delicious and super easy to make! I love that both dishes incorporate garlic, which adds such a great depth of flavor. The veggie dish seems like a great way to use up leftover vegetables, and the addition of Velveeta or any melty cheese sounds indulgent!

For the fish dish, I appreciate how simple yet flavorful it is with just lemon pepper and garlic salt. It’s great that you made it microwave-friendly, too—perfect for quick meals.

Do you think this could work with other types of fish, like tilapia or cod? I bet experimenting with different herbs or a squeeze of fresh lemon on top after cooking could also elevate it even more! Can’t wait to try these out!
