Pasta without egg?

No eggs for my pasta? I’m starting to feel a bit desperate here! 😂 I can’t justify spending $6 a dozen on eggs. I usually make my pasta with a ratio of 0.75 cup of flour to 1 egg. I know there are substitutes for eggs in baking, but are there any good options for pasta?

  1. Absolutely! You can definitely make pasta without eggs. One common alternative is to use water or olive oil in place of the egg. For every cup of flour, you can start with about 1/3 cup of water and adjust as needed to get the right consistency. You can also add a bit of salt for flavor.

Another option is to use semolina flour instead of all-purpose flour, which can create a nice texture. Some people even use a combination of water and a bit of tofu or aquafaba (the liquid from canned chickpeas) to help bind the dough if you’re looking for something a little different.

Give it a try! Homemade pasta without eggs can still be delicious. Just remember to adjust the hydration as needed since different flours can absorb water differently. Good luck!
