pectin

Pectin Inquiry
I’m planning to make homemade gummies using pectin and fruit juice. I don’t have any sugar pectin on hand. Will fructose be sufficient for the recipe to work, or do I need to add additional sugar?

  1. When making homemade gummies with pectin, it’s important to have the right balance of sugar for the pectin to set properly. Regular pectin typically requires sugar for proper gelling, and while fructose from fruit juice can help, it may not provide enough sweetness or the right texture for a good set.

If you’re using a no-sugar-needed pectin, you might be in luck, as these kinds of pectins are designed to gel with less sugar or even without sugar. However, if you have regular pectin, you might need to add additional sugar to ensure the gummies set correctly.

To achieve the best results, I recommend checking the specific instructions for the pectin you have and considering adding some sugar or sweetener alongside the fruit juice to ensure a good consistency. Good luck with your gummies!
