Please help me decide how to make these chicken thighs tonight!

Help me figure out how to cook chicken thighs for dinner tonight! I’m on a tight budget, so I can’t buy any extra ingredients. I prefer a saucy dish and want to sauté the chicken on the stovetop. If I can’t come up with anything else, I might just go with a Teriyaki marinade, but I’ve had that a lot recently, so I’d love some fresh ideas!

Here’s what I have on hand:
– Roasted peppers (jarred)
– Canned beans (chickpeas, cannellini, pinto, red kidney)
– Various spices (cumin, paprika, garlic & onion powder, adobo, parsley, thyme, and more)
– Canned tomato sauce
– A jar of salsa
– Ramen noodles (the plain kind)
– Basmati rice
– Jasmine rice

Any creative suggestions? Thanks!

  1. You’ve got some great ingredients to work with! Here’s a quick and easy idea that uses the chicken thighs, roasted peppers, and spices to create a flavorful sauté that can be served over rice or with beans.

Spiced Chicken Thighs with Roasted Peppers and Tomato Sauce

    Ingredients:
    – Chicken thighs
    – Roasted peppers (from the jar)
    – Canned tomato sauce
    – Spices (cumin, paprika, garlic powder, onion powder, adobo, parsley)
    – Olive oil (or any oil you have)

    Instructions:

    1. Prep the Chicken: Pat the chicken thighs dry with a paper towel and season both sides generously with cumin, paprika, garlic powder, onion powder, adobo, and parsley. You can mix the spices together in a small bowl first for even distribution.

    2. Sauté Chicken: In a large skillet, heat some oil over medium-high heat. Once hot, add the seasoned chicken thighs. Cook for about 5-7 minutes on each side, or until they’re browned and cooked through. If needed, add a bit more oil to prevent sticking.

    3. Add Roasted Peppers: Once the chicken is cooked, remove it from the skillet and set aside. In the same skillet, add the roasted peppers (drained from the jar) and sauté for a couple of minutes to warm them through.

    4. Create the Sauce: Pour in the canned tomato sauce and stir to combine with the peppers. You can season the sauce further with a pinch of salt and any extra spices you like. Let it simmer for a few minutes.

    5. Combine: Return the chicken thighs to the skillet and spoon the sauce over the top. Let it cook together for a minute or two to meld the flavors.

    6. Serve: You can serve this over basmati or jasmine rice, or even alongside a side of beans for extra protein!

This dish is easy to make and should be full of flavor, and you won’t feel like you’re eating the same old Teriyaki! Enjoy your meal!
