Recreating a Restaurant Dish
I was stuck between two options for dinner tonight, and now I can’t stop thinking about the dish I didn’t pick! I’m not quite sure how to prepare it. Any advice would be appreciated!

    Ingredients:

    • Pasta: 8 oz (spaghetti or your choice)
    • Chicken: 2 boneless, skinless chicken breasts
    • Fresh Spinach: 2 cups
    • Fresh Tomatoes: 1 cup, diced (or you can use cherry tomatoes, halved)
    • Sundried Tomatoes: 1/2 cup, chopped (packed in oil is best)
    • Prosciutto: 4 slices, chopped
    • Garlic: 3 cloves, minced
    • Olive Oil: 3-4 tbsp (plus more for cooking)
    • Salt & Pepper: to taste
    • Parmesan cheese: for serving (optional)

    Directions:

    1. Cook Pasta: Start by boiling a large pot of salted water. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of the pasta water before draining.

    2. Cook Chicken: While the pasta is cooking, season the chicken breasts with salt and pepper. In a large skillet, heat 2 tbsp of olive oil over medium heat. Cook the chicken for about 5-7 minutes on each side or until cooked through. Once done, remove from the skillet and let it rest before slicing it into strips.

    3. Sauté Vegetables: In the same skillet, add another tablespoon of olive oil if needed. Sauté the minced garlic for about 30 seconds until fragrant, then add the fresh spinach and cook until wilted.

    4. Combine Ingredients: Add the diced fresh tomatoes, sundried tomatoes, and chopped prosciutto to the skillet. Cook for another 2-3 minutes, allowing the flavors to meld.

    5. Toss Pasta: Add the drained pasta to the skillet and toss everything together. If the mixture seems dry, add a little of the reserved pasta water to loosen it up. Adjust seasoning with salt and pepper.

    6. Serve: Plate the pasta and top with the sliced grilled chicken. Drizzle with a bit more olive oil if desired and sprinkle with Parmesan cheese.
