Sick with Pneumonia and wanted to add some pizazz to Campbell’s chicken noodle

Feeling under the weather with pneumonia, and I’ve been indulging in quite a bit of chicken noodle soup lately (thankful for my amazing friends and family who have been bringing me meals!). Today, I decided to add a little flair to Campbell’s chicken noodle without putting in too much effort. Here’s what I did:

  1. Sautéed a chopped onion.
  2. Added a dash of turmeric, ginger, garlic powder, and half a teaspoon of lemongrass paste.
  3. Stirred in one can of Campbell’s Chicken Noodle and one can of lite coconut milk.
  4. Tossed in a couple of handfuls of fresh spinach along with a squeeze of lime juice.

And just like that, I transformed my soup into something new and delicious! Sure, making it from scratch would be healthier, but honestly, I’m just too wiped out right now.
