Sourdough protein pancakes?

Looking for a recipe for high-protein sourdough pancakes! I’ve been making the King Arthur sourdough pancakes frequently, but I find they’re not quite substantial enough for breakfast. Any recommendations?

  1. Absolutely, here’s a delicious high-protein sourdough pancake recipe you can try!

    High-Protein Sourdough Pancakes

    Ingredients:

    • 1 cup active sourdough starter (fed or unfed)
    • 1 cup rolled oats (blended into flour for more protein)
    • 1/2 cup cottage cheese or Greek yogurt
    • 2 large eggs
    • 1/4 teaspoon salt
    • 1 teaspoon baking powder
    • 1 tablespoon honey or maple syrup (optional, for sweetness)
    • 1/2 teaspoon vanilla extract (optional)
    • Milk or water (as needed for consistency)
    • Cooking oil or butter (for the pan)

    Instructions:

    1. Blend Oats: If you’re using rolled oats, blend them in a food processor or blender until they reach a flour-like consistency.

    2. Mix Ingredients: In a large bowl, combine the active sourdough starter, blended oat flour, cottage cheese or Greek yogurt, eggs, salt, baking powder, honey (if using), and vanilla extract. Mix until well combined. The batter should be thick; add a little milk or water if it’s too thick for pouring.

    3. Heat the Pan: Heat a skillet or griddle over medium heat and lightly grease it with cooking oil or butter.

    4. Cook the Pancakes: Pour about 1/4 cup of batter for each pancake onto the skillet. Cook until bubbles form on the surface and the edges look set, about 3-4 minutes. Flip and cook for another 2-3 minutes on the other side until golden brown.

    5. Serve: Serve warm with your favorite toppings like fresh fruit, nut butter, or maple syrup.

    Tips:

    • You can add protein powder to the batter for an extra protein boost.
    • Experiment with add-ins like blueberries or chocolate chips to make them even more delicious.

    Enjoy your protein-packed breakfast!
