Spring make ahead meals

Spring Make-Ahead Meals

My brother and sister-in-law just moved into their new home and are getting settled in. With a one-year-old and two busy jobs, they could use some help. I’m heading down this weekend to assist with the move and want to bring some easy, ready-to-eat meals. I was thinking of dishes like lasagna or other options that can be prepared ahead of time and stored in the freezer. Since we’re in Ohio and eager for spring, I’d love suggestions that feel fresh and upbeat, moving away from winter comfort foods. Any ideas?

P.S. I’d like to clarify that I’m looking for freezer meals, not something to prepare on the day of the move. Thanks!

  1. That’s a thoughtful gesture! Here are some spring-inspired make-ahead meals that can be frozen and will give your brother and sister-in-law a fresh and light meal option:

    1. Vegetable Lasagna – Instead of the traditional heavy version, make a vegetable lasagna using layers of zucchini, spinach, and ricotta cheese. You can even add in some fresh herbs like basil and oregano for that spring flavor.

    2. Quinoa and Veggie Bowls – Prepare a batch of quinoa mixed with roasted seasonal vegetables (like asparagus, bell peppers, and peas) and lemon dressing. Portion them out in containers for easy reheating.

    3. Chicken and Vegetable Stir-Fry – Cook up a chicken stir-fry with colorful veggies such as snap peas, carrots, and bell peppers, toss in some soy sauce or teriyaki sauce, and freeze in servings.

    4. Spring Vegetable Soup – Create a light soup with fresh spring veggies like leeks, peas, and asparagus. You can blend it for a creamy texture or leave it chunky. Portion and freeze for quick bowls.

    5. Stuffed Bell Peppers – Stuff bell peppers with a mixture of brown rice, beans, corn, and diced tomatoes with spices. These are vibrant and can be frozen for a wholesome meal.

    6. Herbed Chicken and Rice Casserole – A lighter casserole with chicken, brown rice, and fresh herbs. You can use lemon and parsley for a vibrant flavor. Freeze in individual portions.

    7. Savory Muffins – Bake a batch of savory muffins with ingredients like spinach and feta or zucchini and cheese. These can be a great quick snack or meal side.

    8. Pasta Primavera – Make a light pasta with seasonal vegetables and a fresh herb sauce. This dish can be enjoyed hot or cold and freezes well.

Make sure to label everything with the name and date before freezing to keep things organized. Enjoy your time helping them settle in—it’s going to mean a lot!
