Squid and rice flour

Squid and Rice Flour Recipe Help

Hi everyone! I have some frozen squid that I’d like to cook before I move, and I’m a big fan of calamari and tamoyaki. However, due to medical reasons, I can’t have wheat flour. I have squid, rice flour, cassava flour, psyllium, and rice wraps for spring rolls on hand.

Are there any ways to prepare the squid besides traditional breading? I’m open to steaming or any other methods you might suggest. I know there are gluten-free breading options, but I have difficulty standing for long periods, so I’m looking for something a bit easier. Thanks for your help!

  1. It sounds like you have some great options to work with! If you’re looking to prepare squid without using wheat flour, here are a couple of easy ideas:

    1. Steamed Squid: You can simply steam the squid for a healthy option. Clean and cut the squid into rings or leave it whole, season it lightly with salt, pepper, and perhaps a splash of lemon juice, then steam for about 5-7 minutes until it’s just cooked through. Serve it with a dipping sauce like soy sauce or a spicy mayo made with gluten-free mayonnaise and sriracha.

    2. Rice Flour Breading: If you want to lightly bread the squid, you can use rice flour! Just toss the cleaned squid in rice flour seasoned with salt, pepper, and any spices you like (such as paprika or garlic powder). Then, you can pan-fry them in a bit of oil for a quick and easy version of calamari. Since you mentioned standing is hard, you could use a shallow pan and do it in batches to minimize the time you spend cooking.

    3. Cassava Flour Option: Similar to the rice flour, you can also use cassava flour for a slightly different flavor. Mix cassava flour with spices and coat the squid before frying.

    4. Spring Roll Filling: If you’re feeling adventurous, you can use the squid as a filling for the rice wraps. Just cook the squid quickly, chop it up with some veggies, and wrap them in the rice paper.

These methods should give you delicious results without requiring too much standing or effort! Enjoy your cooking!
