Suggestions for meals on too hot summer days?

What are some meal ideas for sweltering summer days?

I’m currently staying at a caravan park in South Africa, and let me tell you, there’s no air conditioning and it’s scorching hot! My family keeps pressuring me to cook, and since we’re neighbors, saying no just leads to some grumbling.

I’m not keen on spending time slaving over a hot stove, and unfortunately, they’re not fans of the refreshing summer meals I enjoy, like salads, air-fried chicken, or wraps.

I’d love some easy suggestions that won’t have me melting away in front of the heat. Any ideas to help me out? Thanks!

  1. I totally understand the struggle of cooking in the heat! Here are some easy meal suggestions that require minimal cooking and can help keep things cool:

    1. Cold Pasta Salad: Cook pasta in advance during the early morning or evening to avoid the heat. Toss it with olive oil, cherry tomatoes, cucumbers, bell peppers, feta cheese, and a simple dressing. Serve it chilled.

    2. Gazpacho: This is a refreshing cold soup made from blended tomatoes, cucumbers, bell peppers, garlic, and a splash of vinegar and olive oil. Serve it chilled for a light meal.

    3. No-Cook Tacos: Use pre-cooked shrimp or canned beans as the protein. Fill tortillas with guacamole, salsa, lettuce, and whatever toppings you like.

    4. Charcuterie Board: Assemble a platter with cold meats, cheese, crackers, fruit, and nuts. It’s easy to put together and requires no cooking!

    5. Wraps with Deli Meat: Use tortilla wraps with pre-sliced deli meats, cheese, lettuce, and hummus. They’re light and can be very tasty.

    6. Stir-Fried Veggies: If you do have a stove with quick-cooking capabilities, stir fry some veggies for just a few minutes and serve them over rice or noodles.

    7. Microwave Dishes: If you have a microwave, you can make baked potatoes or microwave some vegetables and pair them with pre-cooked options.

    8. Fruit Salad: Prepare a large bowl of mixed fruits. You can even add yogurt for a refreshing twist or serve it with granola.

    9. Chilled Ceviche: If you’re feeling adventurous, try making a simple ceviche with shrimp or fish marinated in lime juice, and toss in tomatoes, onions, and cilantro. It’s refreshing and no cooking is needed!

    10. Frozen Treats: Consider making smoothies or protein shakes with frozen fruit and yogurt, or even freeze some fruit juice in ice trays for a refreshing snack.

Hopefully, one of these ideas will keep you cool while satisfying your family’s hunger!
