Too Many Carrots!

A couple of weeks ago, I bought a 10-pound bag of carrots while I was unemployed and shopping on an empty stomach. After a lot of struggle meals, I was craving fresh produce, and buying in bulk ended up being cheaper than getting loose carrots. 🙈

However, I’ve discovered that it’s a challenge to use up 10 pounds of carrots on my own, especially since I’m no longer working in a restaurant kitchen. 😅 So far, I’ve baked carrot cake, made glazed and roasted carrots, tossed them in salads, shredded them for sesame noodles, and even juiced a few, but I’m running low on creative ideas.

Bonus points for any clever ways to sneak them in without the carrot flavor overpowering the dish, as I’m currently living with someone who isn’t a fan of carrots and I’d like to find meals she’d enjoy too. Thanks in advance for your help! 🙌
