Unique Turkey Dinner Menu (No Thanksgiving Vibes)

I’ve decided to finally roast the 69-cent-per-pound turkey I snagged during the Thanksgiving sale, but I’m steering clear of traditional Thanksgiving dishes. No stuffing, gravy, mashed potatoes, or sage flavors here!

Does anyone have creative recipes that break away from the usual turkey prep?

Update: I’m planning to spatchcock the turkey and grill it on my gas grill, though I’m still figuring out the spices and sides. I’d love to smoke it, but I don’t have a smoker on hand. Dinner is tomorrow!

Update 2: I’m feeling inspired by Mexican cuisine! I whipped up some mole sauce using this gringo recipe since I had all the ingredients, and I’m hoping it captures some authenticity.

Update 3: The turkey is spatchcocked! I created a Jamaican jerk spice blend and coated the bird in it. It’s currently in the fridge defrosting and allowing the flavors to soak in.
