I’m finally ready to roast that turkey I snagged for just 69 cents a pound last Thanksgiving!

But here’s the catch—I don’t want to make a traditional Thanksgiving feast. No stuffing, gravy, mashed potatoes, or sage-flavored dishes for me!

Does anyone have some unique turkey recipes they love?

Update: I’m planning to spatchcock the turkey and cook it on my gas grill. The spices and sides are still up in the air. I would love to smoke it, but I don’t own a smoker. Dinner is tomorrow!

Additional Update: I think I’m leaning towards a Mexican theme! I just made mole using this gringo recipe, since I had all the ingredients on hand. Fingers crossed it turns out authentic!

Final Update: The turkey is now spatchcocked! I seasoned it with a Jamaican jerk spice blend and it’s currently in the fridge, thawing and dehydrating.
