Unpopular opinion: I believe that tenting meat with foil while it rests is completely unnecessary. The intention behind it is to keep the meat warm, but in my experience, it really doesn’t make a noticeable difference. You might retain a degree or two of heat, but to me, it feels like a waste of foil. I always choose to skip this step, regardless of the recipe.
