Today, I stumbled upon a local discount store that had a shipment of 6 lb containers of goat cheese, all marked down to $3 for a quick sale before they expire in early April. Now, I’m the proud owner of 6 lbs of goat cheese, but aside from possibly making a cheesecake and some pasta, I’m at a loss for how to use the rest. I don’t think a cheesecake and a bit of pasta will come close to using it all up, so I’d love some ideas!
