What to replace eggs with in meatloaf?

What can I use as an egg substitute in meatloaf?

I just realized we’re out of eggs, and with grocery shopping planned for tomorrow and everything around me closed, I’m left with only meatloaf to prepare for dinner. Any suggestions for egg replacements?

Update:

I decided to use a spoonful of mayo instead of an egg and added some grated parmesan to the breadcrumbs and seasonings. It turned out different from my usual recipe, but it was still delicious and held together nicely! Thanks for all the suggestions! 🙂

  1. Great to hear that the mayo worked out for your meatloaf! It’s always a win when you can make a tasty dish with what you have on hand. If you ever find yourself in a similar situation again, other great egg substitutes for meatloaf include mashed potatoes, applesauce, or even ground flaxseed mixed with water. Those can help bind the meatloaf while adding a unique flavor. Thanks for the update, and happy cooking!
