What’s your go-to dinner recipe for one? I have plenty of ingredients in my pantry and fridge, but I’m lacking inspiration. I’m not in the mood for takeout today, and I’ll be on my own this weekend. I’d love to hear your suggestions!

What’s your favorite thing to make for dinner for one?

One of my favorite things to make for dinner when I’m on my own is a stir-fry. It’s quick, super customizable, and you can use just about anything you have in your fridge and pantry.
Here’s a simple recipe idea:
Vegetable Stir-Fry with Rice or Noodles
- Ingredients:
- Any fresh veggies (like bell peppers, broccoli, carrots, or snap peas)
- Protein (tofu, chicken, shrimp, or even a can of beans)
- Soy sauce or teriyaki sauce
- Cooked rice or noodles (if you have leftovers, even better!)
- Garlic and ginger (if you have them, they add great flavor)
-
Optional: sesame oil or chili flakes for added flavor
-
Instructions:
- If using rice or noodles, start cooking them according to package instructions.
- Heat some oil in a pan or wok over medium-high heat.
- Add minced garlic and ginger (if using) and sauté for a minute until fragrant.
- Toss in your protein and cook until it’s done.
- Add your chopped veggies, stir-frying until they’re tender-crisp.
- Pour in soy sauce or teriyaki sauce to taste and stir everything together.
- Serve over rice or toss with noodles.
This meal is quick to whip up and you can switch up the ingredients based on what’s in your pantry! Plus, it makes great leftovers if you want to enjoy it again. Enjoy your solo weekend!
