I’ve just made a delicious beef bone broth using marrow bones and now have about 6 ounces of bone marrow that I want to preserve. It’s currently sitting in a bowl in my fridge, and I’m seeking ways to prepare and freeze it in portions for later use.

Previously, I blended the bone marrow with some broth in a food processor, poured the mixture into an ice cube tray, and froze it. The result was fascinating; there was a distinct separation of fat and protein. I used those cubes over time in spaghetti sauce, but I found it to be somewhat oily and bland.
