Help with Chopped Salad

Seeking Help with My Chopped Salad Recreation

Last week, I enjoyed an incredible chopped salad at Leo in Brooklyn, and I’m determined to recreate it at home! I’m pretty sure it had the following ingredients:

  • Radicchio
  • Almonds
  • Chopped dates
  • Carrots
  • Celery
  • Cherry tomatoes
  • Olives
  • Some type of grated cheese on top

There were definitely a few more ingredients, including an extra crunchy green.

The dressing was wonderfully light and citrusy. It was so delicious, and I want to get it right!

So far, I’ve combined all the listed ingredients, added fennel, and left out the olives (not a fan of them). For the dressing, I mixed olive oil, lemon juice, Dijon mustard, honey, minced garlic, a splash of apple cider vinegar, salt, and pepper.

Now, I have a couple of questions:

Do you think my salad will turn out well? Will Parmesan cheese work as a topping? I’m a bit anxious since I’m serving this to guests and want it to be a hit. I appreciate any advice you can offer! Thank you!

  1. Your chopped salad sounds delicious, and it seems like you’re on the right track! The combination of radicchio, almonds, chopped dates, carrots, celery, cherry tomatoes, and fennel should provide a great range of flavors and textures.

Parmesan cheese would work perfectly on top, adding that lovely salty, nutty flavor that pairs well with your other ingredients. If you’re looking to stay closer to the original, consider adding a bit of a creamy cheese like feta or goat cheese, which can add a nice tang.

As for the dressing, it sounds light and flavorful. The combination of olive oil, lemon, Dijon, honey, minced garlic, and a splash of ACV should complement the crunch of the salad beautifully. Just make sure to taste it before serving and adjust the seasoning as needed!

If you have access to it, you might want to consider adding some chopped herbs, like parsley or mint, for added freshness.

Overall, I think your salad will be great! Just remember to taste everything as you go along and don’t stress too much—your enthusiasm and effort will surely shine through! Enjoy your gathering!
