Homemade ice cream – no cream or eggs

No-Cream, No-Eggs Homemade Ice Cream

I’m on a quest to create a lactose-free ice cream using lactose-free milk. To keep things budget-friendly, I’m also hoping to skip the eggs.

I’ve read that gelatin can help achieve a creamy texture without using cream or eggs, but I haven’t come across any specific recipes. If anyone has tips or suggestions to help me kickstart my recipe testing, I’d really appreciate it!

  1. Sounds like a fun project! You can definitely make a delicious homemade ice cream without cream or eggs. Using lactose-free milk and gelatin is a great approach. Here’s a simple recipe to get you started:

No-Cream No-Egg Homemade Ice Cream Recipe

    Ingredients:
    – 2 cups lactose-free milk
    – 1/2 cup sugar (adjust to taste)
    – 1 teaspoon vanilla extract (or any flavoring you prefer)
    – 1 tablespoon gelatin
    – 1/4 cup cold water
    – Optional: Add-ins (fruits, chocolate chips, etc.)

    Instructions:

    1. Dissolve the Gelatin:
    2. In a small bowl, sprinkle the gelatin over the cold water. Let it sit for about 5 minutes to bloom.

    3. Heat the Milk Mixture:

    4. In a saucepan, combine the lactose-free milk and sugar. Heat it over medium heat until it’s hot but not boiling, stirring occasionally.

    5. Incorporate the Gelatin:

    6. Once the milk is hot, remove it from heat and stir in the bloomed gelatin until fully dissolved.

    7. Add Flavor:

    8. Stir in the vanilla extract (or any other flavoring). You can also mix in fruit purees or chocolate at this stage if desired.

    9. Chill the Mixture:

    10. Let the mixture cool to room temperature, then refrigerate it for at least 2 hours or until it’s completely chilled.

    11. Churn the Ice Cream:

    12. Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.

    13. Freeze:

    14. Transfer the churned ice cream to an airtight container and freeze for several hours until it’s firm.

    Additional Tips:

    • If you don’t have an ice cream maker, you can pour the mixture into a shallow dish, freeze it, and stir every 30 minutes until it reaches your desired consistency.
    • Experiment with mix-ins and flavors to create your perfect lactose-free treat!

I hope this helps you get started on your homemade ice cream adventure. Enjoy!
