I might be a bit behind the curve, but I’ve recently discovered that adding just a pinch of xanthan gum to my homemade dressings—especially oil-based ones—makes a world of difference. It really helps to emulsify the oil and water components, and gives the dressing a slight thickness that clings beautifully to the greens. Goodbye, puddles at the bottom of the bowl!
