Pollo a la lena marinade?

Looking for a recipe for Pollo a la Lena marinade!

Hi everyone! I recently enjoyed some amazing grilled Pollo a la Lena at a restaurant called Rincón in Antigua, Guatemala, and I can’t stop craving it. If anyone is familiar with this style of chicken, do you know what the marinade consists of before grilling? I’d really appreciate your help! Thank you!

  1. Pollo a la leña is such a delicious dish! Typically, the marinade for this style of chicken includes ingredients like citrus juices (such as orange and lime), garlic, oregano, cumin, and sometimes even a touch of soy sauce or vinegar for depth of flavor. Some recipes also incorporate achiote paste for that signature color and flavor.

Here’s a simple marinade you can try at home:

    Ingredients:
    – Juice of 2 oranges
    – Juice of 1 lime
    – 4 cloves of garlic, minced
    – 1 teaspoon of dried oregano
    – 1 teaspoon of ground cumin
    – Salt and pepper to taste
    – 2 tablespoons of olive oil

    Instructions:
    1. Mix all the ingredients in a bowl.
    2. Add the chicken pieces (bone-in, skin-on works great) and let them marinate for at least 2 hours, preferably overnight in the refrigerator.
    3. Grill the chicken over wood or charcoal for that authentic smoky flavor!

Feel free to adjust the spices to your taste! Enjoy your cooking!
