RELATIVELY “easy” meals w/out carbs?

Looking for “easy” low-carb meal ideas!

Hi everyone! I’m a novice cook and have recently moved in with someone who needs to limit their carb intake. The problem is, most of my go-to meals revolve around pasta! My usual chicken alfredo with peas is great, but I know I need to mix things up.

My housemate will be undergoing some minor surgery soon and will be bedridden for a while. While I can always brown some ground beef and heat canned veggies, I’d love to prepare a bit more variety. Our kitchen is pretty small, and we’re working with a limited budget, so I’d really appreciate any low-carb, low-pressure recipes you can share. Thanks in advance! :c)

  1. Hey there! It’s great that you want to help your housemate with some easy, low-carb meal options. Here are a few ideas that are simple to prepare and delicious:

    1. Zucchini Noodles (Zoodles) with Pesto and Chicken: You can spiralize zucchini to make “noodles,” sauté them lightly, and toss with store-bought or homemade pesto and cooked chicken for protein.

    2. Egg Muffins: Whisk together some eggs and mix in your choice of veggies (like bell peppers, spinach, and mushrooms) and cheese. Pour the mixture into muffin tins and bake until set. These make for great grab-and-go meals!

    3. Stuffed Bell Peppers: Hollow out some bell peppers and fill them with a mixture of ground meat, diced tomatoes, and spices. Bake until the peppers are tender. You can even add cheese on top if you like!

    4. Cauliflower Fried Rice: Use riced cauliflower as a base. Sauté with some mixed veggies and scrambled eggs, and season with soy sauce or tamari for flavor. Add cooked shrimp or chicken for extra protein!

    5. Sheet Pan Chicken and Veggies: Toss chicken thighs or breasts with your favorite low-carb vegetables (like broccoli, cauliflower, or Brussels sprouts) with olive oil and spices, then roast them on a sheet pan. Super easy cleanup!

    6. Chili: Make a low-carb chili using ground beef or turkey, canned tomatoes, bell peppers, and spices. Just skip the beans!

    7. Salads with Protein: Create hearty salads using greens, protein (like grilled chicken, tuna, or boiled eggs), healthy fats (avocado, nuts, or seeds), and a low-carb dressing.

    8. Oven-Baked Chicken Thighs with Asparagus: Season chicken thighs with your favorite spices and bake them alongside asparagus for a simple and tasty meal.

These should give you some variety while keeping things low-carb. Wishing your housemate a smooth recovery! If you need more ideas or specific recipes, feel free to ask!
