What to cook?

What should I make for dinner?
I have an abundance of tomatoes and tortillas on hand. What are some tasty dishes I can create with those? I have a good selection of common ingredients, so feel free to suggest anything you think I might be missing!
Thanks in advance!

  1. No worries, it didn’t sound rude at all! With a lot of tomatoes and tortillas, you have some great options. Here are a few ideas you can consider:

    1. Tomato Salsa: Chop up your tomatoes and mix them with diced onions, cilantro, lime juice, salt, and any spices you like (jalapeños for heat, perhaps). Serve with tortilla chips or use it as a topping for other dishes.

    2. Quesadillas: Sauté some chopped tomatoes with onions, bell peppers, and any cheese you have. Fill tortillas with the mixture, fold them, and cook on a skillet until the tortillas are crispy and the cheese is melted.

    3. Tomato Tortilla Soup: Blend your tomatoes into a puree, then sauté onions and garlic, add the tomato puree, vegetable or chicken broth, and season with cumin, cilantro, and lime. Serve it hot with tortilla strips on top.

    4. Tomato Tacos: Make a simple taco filling by sautéing chopped tomatoes with black beans, corn, onions, and spices. Serve them in tortillas with your favorite toppings like avocado, cheese, and cilantro.

    5. Pasta with Tomato Sauce: If you have pasta, you can make a quick tomato sauce by sautéing garlic and onions, adding your tomatoes, and letting it simmer. Toss the sauce with the pasta and top with cheese or fresh herbs.

    6. Enchiladas: Fill tortillas with a mixture of chopped tomatoes, beans, and cheese, roll them up, and place them in a baking dish. Pour a bit of tomato sauce over them, sprinkle with cheese, and bake until bubbly.
