Please help me decide how to make these chicken thighs tonight!

Help me decide how to prepare these chicken thighs for dinner tonight! Unfortunately, I can’t pick up any extra ingredients right now since money is really tight. I’m in the mood for a saucy dish and would like to sauté the chicken on the stovetop. If I can’t come up with anything else, I might just go with a Teriyaki marinade, but I’ve been eating that a lot lately, so I’d love some fresh ideas!

Here’s what I have on hand:

  • Roasted peppers in a jar
  • Canned chickpeas, cannellini beans, pinto beans, and red kidney beans
  • A variety of spices, including cumin, paprika, garlic powder, onion powder, adobo, parsley, and thyme (along with more!)
  • Canned tomato sauce
  • A jar of salsa
  • Ramen noodles (without seasoning)
  • Basmati rice
  • Jasmine rice

Looking forward to your suggestions!

  1. It sounds like you have some great ingredients to work with! Here’s a simple and delicious way to make your chicken thighs using what you have.

Sautéed Chicken Thighs with Roasted Pepper Sauce:

    Ingredients

    • Chicken thighs
    • Jarred roasted peppers
    • Spices: garlic powder, onion powder, paprika, cumin, and any other spices you enjoy
    • Canned tomato sauce (to enrich the sauce)
    • Olive oil or any other cooking oil you have
    • Optional: parsley for garnish

    Instructions

    1. Prepare the Chicken:
    2. Pat the chicken thighs dry with paper towels and season them generously with salt, pepper, garlic powder, onion powder, paprika, and cumin.

    3. Sauté:

    4. In a skillet, heat some oil over medium-high heat. Add the seasoned chicken thighs and sauté for about 5-7 minutes on each side, or until they are browned and cooked through. Remove from the pan and set aside.

    5. Make the Roasted Pepper Sauce:

    6. In the same pan, add the jarred roasted peppers (drained) and sauté for a couple of minutes.
    7. Add a cup of canned tomato sauce to the pan and stir to combine, scraping up any browned bits from the bottom of the pan.
    8. Season the sauce with more garlic powder, onion powder, paprika, cumin, and adobo if you like it spicy. Let it simmer for about 5 minutes to thicken slightly.

    9. Combine:

    10. Return the chicken thighs to the pan, nestling them into the sauce, and let everything simmer together for a few more minutes to meld the flavors.

    11. Serve:

    12. You can serve this dish over basmati or jasmine rice or enjoy it with some of the canned beans for added protein and fiber. If you have any fresh parsley, sprinkle that on top for a bit of freshness.

This dish will give you a lovely sauce from the roasted peppers and tomato that pairs perfectly with the savory chicken. Enjoy your meal!
